Cayx marches


The Cayx Marches, with a yield of 50hl / ha and a density of 5,000 feet / ha, represents about 30% of the overall production of the castle.

The harvest is mechanical with an onboard sorting system. Fermentation followed by aging in stainless steel vats and cold pre-fermentation maceration at 8 ° C for 3 days.

Vinification is carried out in thermo-regulated stainless steel vats for alcoholic fermentation and maceration for 28 days at 24/26 ° C, followed by a final maceration at 30 ° C.

With a deep red color, the wine opens with sustained aromas of black fruit, plum and blackberry.

In the mouth, it is flexible and greedy, with a well balanced structure. Its fruity notes and freshness make it a delicious and easy drinking wine.

The Marche de Cayx can be served lightly refreshed, to accompany a red meat or a duck breast grilled.

Clay-limestone, located on the second terrace of the valley
