“Cigaralle” is an old word probably from Catalan and used in Aquitaine and Occitanie to describe a pavilion built in a park or a pleasure garden where you can hear the song of cicadas.
The grapes undergo mechanical harvesting, direct pressing, cold settling, thermo-regulated fermentation in stainless steel vats and aging on the lees.
