Château de Cayx

 

The Château de Cayx comes from a plot selection of 7 hectares. The average age of the vines is 35 years old. After a harvest in green, the vine is stripped manually. The harvest is mechanical, with an onboard sorting system and a second manual sorting on the table at the winery. A cold pre-fermentation maceration followed at 8 ° C for 3 days, followed by vinification in thermo-regulated stainless steel vats. Subsequently, alcoholic fermentation and maceration were carried out for 28 days at 26/28 ° C, followed by a final maceration at 32/35 ° C. After the malolactic fermentation, Château de Cayx is aged in new barrels for 1/3 for a minimum of 12 months.


A wine with a crimson color, this wine offers delicate aromas of red fruits and reveals all the intensity and the fleshy character of Malbec. The palate reveals spicy notes and silky tannins. Its concentration makes it a great Cahors wine, elegant, with a good aging potential (10 years).

To serve chambered (19 ° C), with a duck breast with cherries or a leg of lamb of Quercy.
