Terroir
AOC Cahors. Limestone and clayey terraces surrounding the Château.
Grape varietals:
Malbec 85%, Merlot 10%, Tannat 5%.
Vinification and
upbringing:
Vinification in temperature-controlled stainless-steel tanks followed by a
12-18 months’ period of barrel-ageing, depending upon the potential displayed
by the wine.
Tasting notes:
A purple-coloured wine, the Château de Cayx offers delicate aromas of
red fruits and reveals the intensity and fleshy character typical of the Malbec
varietal. In the mouth, it develops spicy notes and silky tannins. Armed with
a concentration that is characteristic of the finest wines of Cahors, it is
also extremely elegant, though built for the long haul. To be served at room
temperature (19°C) and enjoyed with either a breast of duck with cherries
or a roast loin of Quercy lamb.
Prince Henrik’s personal cellar houses some ancient vintages of the Château
de Cayx that are kept for special occasions.
The winery has also constituted itself a stock of older wines over the last decade.
These bottles have reached the peak of their maturity and are currently offered
for sale.
The 2006
vintage of the Château
de Cayx
was recently awarded a Gold Medal
at
the Concours des grands vins de France held in
Mâcon.
